(too old to reply)

I just bought a C720 with a broken screen. I can't find which screen it takes beyond the resolution and the fact that it's an LED screen, I suppose I can check when I get it and then try to cross-reference it.

However, apparently it came as an option with a touch screen!

Does anyone know whether I can simply replace the screen with whatever touch sensitive screen they used please? (I am planning to put Linux Mint on it as a dual boot and don't think it should use up too much of the internal 16 gig of SSD HDD)

I don't know about the touch screen option, but a quick search turned up
some replacement standard screens here, along with an installation video:

Your best source would be the Service Manual, if you can find it somewhere.

It would be worthwhile, paying that much for a screen if we could turn it into a touch-screen model?

Depends whether you really want the touch screen model, which it sounds
like you do. Anyway, if the screens are interchangable, the installation
video likely follows a similar process to what you'd want to do to install
a touch screen.
